Dakos may have originated from Crete, but I don’t think there’s anyone that doesn’t know or doesn’t love it by now. Little Hands, though, for those of you who don’t know it, is headquartered in Crete, and we obviously love dakos. For me, cretan dakos was an easy solution for dinner or snacks, and I still make it when I want to make something for the little hands, but I don’t have the time to do it. However, how could we offer dakos to our little ones, and how could we make it even more nutritious? The “marriage” of the two islands, Crete and Limnos, helps us here, and we’ll make this delicious dakos for children of all ages together, using the whole-wheat rusks by the Poriazis family. Keep on reading to see what I mean.
What we are going to need
- Rusks. I suggest the whole-wheat rusks by lemnosbakery.gr. They’re 100% made of wheat by the “Limnos” variety, cultivated in Limnos by the Poriazis family and their partner farmers on the island. It’s a non-GMO product, rich in plant fibres, low in salt content, trans fats free, preservatives free, and with pure ingredients, like all of the Poriazis family products. Offer the rusk in a way appropriate for the age of your child, either processed in a food processor, broken in pieces and/or wet, or whole.
- Tomato. Of course, you can’t make cretan dakos without tomato, grated and juicy. Alternatively, you can use quartered cherry tomatoes if you want your little ones to eat the dakos with their hands.
- White cheese. Feta cheese is the cheese that’s traditionally used to make dakos, but we wanted to make cretan dakos for our children, which meant we needed a low-salt cheese. So, I suggest using fresh mizithra, it’s really a great substitution.
- Oregano.
- Olive oil. Necessary.
- Optional. Sliced, quartered, or halved olives. Additionally, more vegetables, like a grated carrot.
Tips
- For children over 6 months old, you can offer dakos in little bowls with a spoon. Process the wheat rusks in a food processor thoroughly and then add the grated tomato, the olive oil, the grated anthotyros, and the oregano over it. Additionally, you can add chopped olives. Of course, you can offer it that way for any age.
- For children over the age of 9 months old, you can just break the rusks and wet them before assembly, or allow them to get wet by the tomato and the olive oil, and offer it after it has grown softer.
- Depending on the age, you can add a part of the rusk.
- Enrich the tomato with more vegetables for an even more nutritious result.
- If you like capers, I wholeheartedly suggest adding some. Just wash it under running water to remove some of the salt.
How the little hands can help
- Cretan Dakos is so easy, it can even be made from start to finish by the little hands. They’ll just need to pay attention when grating the tomato.
- You can set all ingredients in front of them and allow them to choose how they’ll serve them on their plate.
