Everyone likes marble cakes, it’s the cake of our childhood, or at least of my childhood. It is the cake I used to salivate over as it was baking, and its smell still brings forth so many memories. Of course, the cake my mother used to make was far from healthy, so I decided to make my own version with the same smell, texture, and as close as possible in taste. I wanted a healthy marble cake for the little hands, and ta-da! Olive oil marble cake, with coconut sugar and spelt flour, a cake that even Usain Bold would enjoy—who got into the kitchen thanks to Epson—since athletes are very well versed in healthy eating. The little hands couldn’t eat fewer than 2 pieces, and I offered them without any worries.

What we are going to need
- Flour. For the marble cake, I suggest spelt flour, which is more nutritious. However, you can use all-purpose flour as well.
- Eggs. We prefer free-roam or organic eggs.
- Milk. Plant or animal.
- Olive oil. Did you know that we can make marble cake with olive oil instead of butter, achieving an amazing result? I guarantee that you won’t even realize it.
- Coconut sugar. The sweetener with the lowest glycaemic index.
- Cocoa. For the chocolatey part of your cake.
- Orange. For the aroma. Make sure it’s an unwaxed orange.
- Baking powder. It will help your cake rise. With 2 heaped teaspoons, it will be almost double.
Tips
- Make sure all ingredients are at room temperature before starting.
- Don’t open the oven for the first 20 minutes, or the marble cake won’t rise.
- The temperature differs from oven to oven, so check often.
- Your cake is ready when a knife inserted in it comes out clean.
How little hands can help
- Have your little chefs break the eggs and whisk them.
- In general, they can add the ingredients, mix them, and move the batter to the pan. Essentially, they can make the marble cake from the beginning to the end.
- Older children can write the recipe on the recipe card and weigh the ingredients, while younger children should be given the pre-measured ingredients to add to the mix.

Oil the cake pan and line it with parchment paper. Then, flour the pan and tap out the excess.
Whisk the eggs thoroughly in a large bowl.
Add the olive oil and the coconut sugar and mix thoroughly.
Add the milk, the vanilla extract, and the orange zest and mix.
Finally, add the flour and the baking powder and mix well.
Reserve 1/3 or 1/2 of the mixture in a second bowl and add the cocoa, mixing with a spoon.
Pour almost all of the light-coloured batter into the cake pan.
Pour the chocolate part over it, then cover it with the rest of the light-coloured mixture.
Bake on the middle rack for 45 minutes or until a knife inserted into it comes out clean.
After it has been cooked, let the cake cool down before removing it from the pan and slicing it.
