Cheesecakes are, if not my favourite, then among my favourite desserts. The little hands also like them, after he tried some at 18 months old. In this article, I’m sharing a delicious recipe for mini cheesecake that’s easy to make, no bake, and butter free. It uses a very easy and delicious base with Pasteleion children’s bars and an amazing blueberry sauce. The little hands loved it, are you ready to try it out?
What we are going to need
For the base
- Pasteleion Children’s Bars. They’re amazing pastelia/bars that you’ll find in 3 delicious flavours: strawberry, coconut, and banana. They have no processed sugar and can be eaten from the age of 18 months, safely and regret-free, since Pasteleion has ensured that all ingredients are carefully chosen, organic, and natural. They’re a great source of plant fibres. The mini cheesecakes were made with a base of Pasteleion bars in strawberry and coconut flavours, and the result went beyond my expectations.
- Peanut butter. Optional.
For the cream
- Cream cheese. You can’t make cheesecake without it. Make sure the cheese you use is carrageenan free.
- Coconut cream. Choose a canned coconut cream that you recognize its ingredients, and that has no difficult words. Make sure you place it in the fridge to freeze the night before.
- Lemon. To give your mini cheesecakes their aroma.
- Sweetener. Optional.
For the sauce
- Fruits. I used frozen blueberries or strawberries, and I suggest using them frozen since their season is the summer. Alternatively, I suggest making them with chokeberries, since now’s their season.
- Sweetener. I’ve made them with honey, maple syrup, and white petimezi, so you can make them with anything you have available. You can also adjust the quantity to your tastes.
- Lemon. You’ll need its juice to make the sauce soar.
- Corn starch. It’s necessary for the sauce to bind. Dissolve in a little water before adding to the pot, if you put it in the pot right away it won’t thicken.
Tips
- You can use store-bought strawberry jam with no added sugar as a topping for your mini cheesecakes, or make your own.
- You’ll need to place it in the fridge for at least 2 hours or in the freezer for half an hour so that the cream can bind.
- You can store the mini cheesecakes in the fridge for 3–4 days or in the freezer (without sauce) for 3–4 months.

Place the bars and the peanut butter, if you add any, into the food processor and process them thoroughly.
Spoon the mixture into muffin silicone moulds and shape.
Place the coconut cream, the cream cheese, and the lemon in the mixer bowl.
Mix at medium speed until the cream becomes fluffy.
Move the cream to the bases and spread evenly with a spatula.
Place the mini cheesecakes in the fridge for at least 2 hours.
Heat up the maple syrup or honey over medium heat, in a pot.
Add the frozen fruit and the lemon, and mix.
Add the water in a glass, add the corn starch, and mix.
Add the water and the corn starch to the pot.
Gently mix so that the sauce binds and remove from the heat.
Pour the sauce over the cheesecakes and enjoy.
