Where should I start writing about these coconut snowballs? Let’s start with the fact that I waged “battle” to take photos of them since the little hands wanted to eat them all the moment he tried them. And then, he wanted more, and more! What are we going to need

  • Shredded coconut. What kind of coconut truffles would they be without shredded coconut?
  • Rice cakes. Always choose rice cakes without any salt. You can substitute it with puffed emmer wheat or something else.
  • Honey. Only for children over the age of one. Alternatively, you can use white petimezi or maple syrup.
  • Coconut oil. I use cold-press oil. Now, in the colder months, coconut oil is solid.
  • Coconut cream/milk. It’s the one sold canned. We prefer it to the common coconut beverage (in the paper packaging) because it solidifies in the fridge and along with the coconut oil, it helps the coconut snowballs bind.

Tips

  • You can store them in the fridge for 4–5 days.
  • You should cover them with shredded coconut before the balls bind completely, or the coconut won’t stick to them. 
  • You can cover the coconut truffles with chocolate. In that case, you’ll need to freeze them first and then dip them in melted chocolate.

And how can you offer your snowballs?

The holidays are the best time to hand out treats, and these snowballs are a very playful idea.   • Older children can read the recipe or weigh the ingredients themselves.
  • Their favourite thing would be forming snowballs. Let them do it and enjoy themselves.
  • Of course, they’ll help tidy up the kitchen afterwards.
  • It’s a good idea to place the little snowballs on top of each other and create little snowmen.

For the topping

Place the rice cakes, broken in pieces, in the food processor and process them into a powder.

Add the coconut oil and the coconut cream in the food processor and mix.

Move the mixture to a bowl and add the shredded coconut and honey and mix with your hands.

When the ingredients are homogenous, form the balls and place them on a tray or plate.

Place the shredded coconut that you’ll use as topping in a deep plate and dip the balls into it, to cover them up.
