“Yum, yum, yum,” the little hands kept singing while eating these apple chocolate brownies. And if that’s not a sign of success, what is? Try to make this fantastic dessert in 10 minutes, which is perfect for the whole family, and genuinely nutritious. With the “Farin up” self-rising flour with 5 cereals by Miloi Agiou Georgiou to make the flavour of your dessert soar, I promise you there won’t be any leftovers, not even a single slice. Let me also note that it’s dairy-free and nut free. Let’s go through all the details. 

Nut-free apple brownies

What we are going to need for the apple brownies 

  • “Farin up” self-rising flour with 5 cereals by Miloi Agiou Georgiou. The 5-cereal self-rising flour is whole grain, and as its name suggests, it is made of 5 different cereals: soft wheat, spelt wheat, emmer wheat, oats, and barley. I don’t need to mention that it’s much more nutritious than the normal self-rising flour, and it also grants a unique flavour to our dessert. It’s a great source of plant fibres for our organisms, and it’s rich in protein. 
  • Apple. We’ll need a large, peeled apple. 
  • Eggs. Prefer free-range or organic eggs, at room temperature.
  • Chocolate. Here at Little Hands, we always use chocolate with coconut sugar and a few, pure ingredients. You can use any kind of couverture you want.
  • Olive oil. You won’t be able to tell that your brownies have olive oil, but if you want, you can use coconut oil or butter here, too.
  • Coconut oil or butter. I tried both versions without changing anything in the process or quantity, so the choice is yours, depending on what you happen to have at home. The important thing is to ensure that it’s at room temperature.
  • Coconut sugar. Coconut sugar is a sweetener with the lowest glycaemic index. It’s suitable for children over the age of 6 months old, but it’s still a sweetener, so you should be offering it in moderation. 
  • Cocoa. I use 100% cocoa, rich in fat, which grants the dessert a fantastic flavour. Additionally, cocoa is very nutritious. Carob powder is a great cocoa substitute. 
  • Vanilla extract. Optional. Alternatively, you can add grated Tonka beans or the beans from a vanilla stick.

Tips

  • You can double the dosages if you want to bake it in a larger pan. 
  • Temperature differs from oven to oven. To check if your brownies are ready, insert a knife, and if it emerges dry, then it’s ready. If there’s still moisture on it, you need to bake it for longer.
  • Don’t open the oven during baking because it will affect how much your brownies will rise, and the temperature of the oven.
  • The recipe is for a square baking pan that’s 20 by 20 centimetres, which makes 12 pieces. 
  • You can store it in the fridge for up to 4 days, or in the freezer for 5–6 months.

 175 g apple, peeled
 100 g self-rising “Farin up” flour with 5 cereals by Miloi Agiou Georgiou
 3 eggs at room temperature
 30 g coconut oil or butter, at room temperature
 30 g olive oil
 30 g coconut sugar
 60 g sugar-free chocolate (with coconut sugar), melted, or any kind of chocolate you want
 20 g cocoa
 ½ tsp vanilla extract (optional)
For topping
 sugar-free chocolate (with coconut sugar), melted
 puffed quinoa (optional)

Preheat the oven to 180°C, set to fan.

Line a 20x20 baking pan with parchment paper.

Cut the apple into pieces and place it in the food processor with the olive oil and the coconut oil (or butter). Process them thoroughly until homogenous.

Beat the eggs with the coconut sugar in a bowl for at least 1 minute.

Add the eggs to the apple mixture along with the vanilla and the melted chocolate and mix thoroughly.

Finally, add the cocoa and the 5-cereal self-rising flour and mix.

Transfer the mixture to the baking pan and bake for 25 minutes.

Set aside to cool and cut into pieces.
