Vegan blueberry waffles

You can’t imagine how aromatic and delicious your waffles maybe if you follow the recipe I’m sharing with you today. Because while there are many vegan waffles, have you ever seen blueberry and mahleb vegan waffles before? Little hands loved them, and with good reason. Additionally, they’re egg-free, dairy-free, butter-free, and nut-free, and if you want, you can make them sweetener free (and equally delicious)! They’re suitable for babies aged 6 months old to people 106+ years old. Let’s make them!

What we are going to need

  • Blueberries. Fresh or frozen, blueberries are this recipe’s protagonist. I used fresh blueberries, but if you want to use frozen, ones for this recipe I’d suggest setting them out in the freezer for a few minutes to thaw somewhat before adding in the mixture.  
  • Flour. I used organic all-purpose flour. In general, you can use any all-purpose flour. Alternatively, you can use emmer flour, spelt flour, or almond flour.
  • Plant milk. Any milk you happen to have in your fridge. If you want, you can even add animal milk or yogurt mixed with water. Always choose plant milk with few understandable ingredients. There are few companies with clear ingredient listings, and you’ll find their products in stores with organic products. One of my suggestions is this.
  • Coconut oil. I choose and suggest cold-pressed coconut oil. For the vegan waffles, you’ll need melted coconut oil. In the summer months, coconut oil liquefies, so you can use it directly, and during the winter, you’ll need to melt it yourself in a small pot.
  • Baking powder.
  • Mahleb. It grants its aroma to the blueberry waffles, making them stand out!
  • Waffle maker.

Optional

  • Tonka bean. You grind part of the Tonka bean. Alternatively, you can use vanilla extract, but you can skip it altogether. 
  • Maple syrup. Or any other liquid sweetener you happen to have in your pantry. You can skip it, of course, especially for younger ages.

Tips for the vegan waffles

  • A common mistake is being in a hurry and opening up the waffle makers before the waffles had time to cook. This has the result of ruining them. A tip for knowing when the waffles are ready, so that you can open the waffle maker with confidence, is waiting for the steam that comes off during cooking to stop. This is the hint that the waffle is cooked enough to be removed and continue with the rest.
  • You can store them in the fridge for up to 3 days, but you can store them in the freezer after cooking for 3–4 months.
  • You can bake the mixture like pancakes as well if you don’t have a waffle maker.
  • The recipe makes about 10–12 blueberry waffles.

How to offer it in BLW

  • For babies 6–9 months old: Cut the mini waffles in 3 sticks, big enough for them to grab and bring to their mouths easily.
  • For babies 9–12 months old: Cut the waffles into little squares. They can usually grab smaller pieces at that age, and it seems they’ve developed their fine dexterity enough, while it’s also an interesting challenge for them.
  • For children older than 12 months: You can offer them in pieces along with a fork for them to eat with, though it’s possible they’ll choose to eat them with their hands.  
  • Always remember that each child is different, so treat what I’m writing above as serving suggestions. For example, the little hands always wanted me to serve the waffle whole so that he could cut it into pieces as large as he wanted.

How the little hands can help

  • Our little helpers can wash the blueberries and mix the ingredients.
  • By spooning the mixture into the waffle maker.
  • They also like being offered options for serving and choosing what they’ll enjoy their waffles with. Always give them options, reinforcing their independence.

Ingredients for 12–15 waffles
 130 g οrganic all-purpose flour

 220 g plant or animal milk
 2 tbsp coconut oil, melted (and some more for the waffle maker)
 1 tbsp heaped baking powder
 ½ tbsp mahleb
 1 tbsp maple syrup, optional
 ½ Tonka bean, ground

Preheat the waffle maker while you prepare the mixture.

Add all liquid ingredients in a bowl—the milk, the melted coconut oil, and the sweetener (if you add any)—and mix.

Add the flour, the baking powder, the mahleb, and the Tonka bean and whisk.

Finally, add the blueberries to the dough and mix gently with a spatula.

Brush the waffle maker with the coconut oil.

Spoon the mixture to the waffle maker and cook for a few minutes.

When the waffle maker stops releasing steam, the waffle is ready. Remove and continue with the rest of the mixture.

Serve with the toppings of your choice and enjoy.
