When the little hands are literally licking his fingers and he asks for a spoon to eat the mixture from the bowl, that’s when you know that the recipe is a total success! These summer nectarine energy balls were created after a restocking stop at the Vios store in Gouves, where we can find select products by Greek producers as well as organic products. That’s how these nectarine energy balls were created, that besides being delicious, are also vegan, gluten-free, dairy-free, and sugar-free. Come, let me give you a treat.
What we are going to need
- Nectarines. Nectarines may be in season for just a handful of months a year, but they’re so delicious that we truly love them. They created an amazing combination of hazelnuts and made the result soar.
- Oat flakes. I used organic whole-grain oat flakes that I bought, along with the other ingredients, from Vios store, which also has an e-shop. Deliveries in the Chersonisos municipality and in the city of Heraklion are on the same day, while in the rest of Greece, they’re sent within 24 hours.
- Dried fruits. I chose to use Medjool dates, which we love for their sweet flavour, and because they’re soft and easy to process. You can also use regular dates, though, or raisins; read more about this below, in the tips section. In any case, make sure you choose something that’s sugar-free.
- Nut butter. We used hazelnut butter which created a fantastic combination with the rest of the ingredients. You can use any nut butter you like, though.
- Hazelnuts. Alright, I don’t need to repeat myself, they make the result soar. You can use any other nut you like, or even skip it. We made the nectarine energy balls with no hazelnuts as well, and they were equally delicious if softer.
- Coconut oil.
- Shredded coconut. As a topping.
Tips
- Alternatively, instead of dates, you can use raisins or plums.
- If you use normal dates or some other dried fruit like raisins, they might be harder. In that case, you should soak them for 5–10 minutes in warm water. Then, strain them and carry on with the instructions.
- Use the nectarines with their skin.
- You can store the nectarine energy balls in the fridge for up to 3 days, but you can also store them in the freezer for a few months.
How the little hands can help
- Our little helpers can choose and wash the nectarines.
- They can add the ingredients (which you’ll have ready in front of them, weighed), and they can mix.
- Older children can read the recipe or weigh the ingredients themselves.
- Their favourite activity will be to shape the energy balls and dip them in the coconut. Allow them to do it and have fun.
- It’s a given that we’ll tidy up the kitchen together afterwards.

Process the Medjool dates and the nectarines in a food processor.
Continue by adding the nuts, if you do add any, and mix again
Finally, add the nut butter, the oat flakes, and the coconut oil, and mix some more.
Place the coconut in a deep plate.
Wearing gloves, shape the mixture in balls and roll them through the coconut one by one to cover them.
Place them on a baking sheet that’s been lined with parchment paper and place in the fridge for 3 hours or in the freezer for half an hour to thicken up, then enjoy.
