With just 4 ingredients

No matter what I tell you about these hazelnut cookies, it won’t be enough! They’re delicious, easy to make, require just 4 ingredients, and can be ready in less than 30 minutes. They have a praline flavour that made the little hands say, “I want us to make these cookies every day, Mum!” and I just had to share the recipe with you! The secret? But the hazelnut butter by the Nutlers, of course! Let me tell you the other 3 ingredients you’re going to need.

What we are going to need

  • Hazelnut butter by the Nutlers. We first tried the hazelnut butter by the Nutlers before the little hands were even one year old. Since then, we’ve been impressed by its velvety texture and unique flavour, which gave the hazelnut cookies this praline aftertaste.   • Egg. To bind the hazelnut cookies. In theory, you could replace it with an egg substitute, but I haven’t tried any myself.
  • Oat flour. Alternatively, you can grind oat flakes to flour. I always use whole-grain oat flour.
  • Coconut sugar. You can reduce the quantity or skip it completely if you want. Coconut sugar is a natural, raw, unprocessed sweetener that comes from the flowers of coconut trees. It has a low glycaemic index, something that makes it ideal even for diabetics, and is allowed for children over the age of 6 months old. However, just like all sweeteners, they should be offered in moderation, and ideally after the age of 2 years old.

Tips

  • Instead of hazelnut butter, you could use peanut butter or any other nut butter you like. The Nutlers have a wide variety for you to choose from.
  • Temperature differs from oven to oven, so check often during cooking.
  • If you have any leftovers—because we usually eat them all in a single day—store them in an airtight jar for 3–4 days, at room temperature.  
  • You can store the dough in the freezer for up to 3 months. I don’t recommend freezing-baked hazelnut cookies, though.

How the little hands can help

  • Older children can weigh the ingredients while younger children can be given the ingredients you’ve already weighed to add them.
  • The little hands are going to love mixing the ingredients.
  • They’ll also love shaping the dough balls, pressing them to make them into a round shape, and choosing the cutter that will decorate their cookies.

Ingredients for 9 cookies
 100 g hazelnut butter by the Nutlers
 50 g oat flour
 1 egg
 25 g coconut sugar

Preheat the oven to 170°C, set to fan.

Add the hazelnut butter by the Nutlers in a bowl along with the egg and whisk thoroughly.

Continue by adding the coconut sugar, and mix.

Finally, add the oat flour and mix with a silicone spatula until you have a homogenous dough that doesn’t stick to your fingers.

Line a baking sheet with parchment paper.

With a spoon or your hand, remove pieces off the dough and shape each in a ball, then place them on the baking sheet.

With the bottom of a glass, press the balls down and into a circular shape. If you want to make them into a design like ours, press them lightly with a cookie cutter after you’ve made them into circles.

Bake for 12 minutes or until golden brown. It shouldn’t take more than 15 minutes.

Remove the cookies from the oven and place them on a cooling rack.
