One pan baked oatmeal

The title is the same in Greek, as I couldn’t find one that was suitable. However, while I couldn’t give a good Greek name to this delicious oatmeal dish, I was able to give it many good descriptions. We could say that this one-pan oatmeal is a baked oat cream perfect for all ages, as you’ll read below. The little hands are asking for it as “the one with the fruits!” You’ll need just 5 minutes of preparation, and as its name suggests, everything will be taking place in the pan where you’ll bake it, no need to dirty any other pan. It’s vegan, dairy-free, gluten-free, and sweetener free, of course! And judging by your messages when you saw it in my Instagram stories, you’ve been eagerly waiting for it!

What we are going to need

  • Fruits. Bananas and forest fruits. Prefer ripe bananas, which will become the natural sweetener for our baked oatmeal.
  • Oat flakes. Here in Greece, we mainly find quick oats, and that’s what I’m talking about every time I mention oat flakes. I did try this recipe with rolled-out oats though, and we liked it very much.
  • Milk. I’ve made baked oatmeal only with plant milk, almond and coconut milk, which was what I had in my fridge. You can make it with plant milk, as well, though, or even water. In case you do use water (mainly for little hands younger than one-year-old), the result will have a less intense taste.
  • Peanut butter. Or any nut butter you like.
  • Chia seeds. Chia seeds add nutrition and help bind the mixture. Alternatively, you can use ground flaxseeds.
  • Cinnamon. I don’t know if you’ve realized it by now, but we love cinnamon so much it couldn’t be missing from this recipe. We can skip it, though, or use any spice we like, or even a vanilla stick.

Tips

  • You don’t really need any tips to make the one-pan oatmeal. The recipe is very simple, and you can easily play around with the ingredients.
  • You can enjoy it warm or cold. When it’s served hot, it’s easier to crush, but that shouldn’t be a problem. Besides, I did say that it’s like an oat cream cooked in the oven.
  • You can store it in the fridge for up to 3 days.
  • Serve with honey or another sweetener and cool yogurt. You can enjoy it by itself, as well.

How the little hands can help

The recipe is so simple that the little hands can make it themselves. And if they add more or less of one ingredient by accident, what’s the problem? Your little ones will have enjoyed themselves and the recipe will “work” either way since it’s very easy and simple. And you can just be in charge of the oven. So simple!

 200 g almond milk or any other milk you want or water
 50 g peanut butter
 3 tbsp chia seeds
 1 tbsp cinnamon

Preheat the oven at 180°C.

In an 18-by-12-centimeter baking pan, add the bananas and mash them with a fork.

Add the rest of the ingredients except the fruit and mix well with a spoon.
