So, there’s some trahanas with bio goat milk by Mama Irene Pasta left over, and it’s delicious, and I had some other ingredients I wanted to use from the fridge—what did I do, then? I experimented! And what did I make? Delicious fluffy trahanas balls! Truly something special! They’re incredibly easy and aromatic, and I won’t take up your time with lengthy introductions today. Let’s see what you’re going to need and let me give you the recipe to make some yourselves!

What we’re going to need

  • Trahanas. I used trahanas with bio goat milk by Mama Irene Pasta, which of course means that it’s both truly delicious and pure, grated by hand. In the recipe, you’ll see the quantity noted with trahanas that are already boiled, so keep in mind that you’re going to need about half a cup of raw trahanas. Follow the boiling instructions on the packaging and let it cool down before using.   • Vegetables. Onion and carrot, both grated.
  • Parsley. Chopped. I always keep some chopped parsley in my freezer.
  • Oats. Just like I wrote in the introduction, these trahanas balls were created with leftover ingredients I wanted to use. One of those was oat flour, but I didn’t have enough, so I added some oat flakes as well. You can use only one if you want, or you can make some oat flour by processing oat flakes in your food processor.
  • Cheeses. Here I used some leftover feta, barely any, and some grated anthotyros for a better flavour. You can use one cheese if you want, but each cheese grants its flavour.
  • Eggs. To bind the mixture.
  • Olive oil.
  • Spices and herbs. Curry, and dried oregano and thyme. The curry went perfectly with the rest.

Tips

  • Use your leftover trahanas by preparing these fluffy trahanokeftedes in 10 minutes.
  • The dosages make 16 trahanas balls.
  • I didn’t try freezing them, but I don’t think it’s a good idea, due to the trahanas.
  • Trahanas have to cool down before you add them to the mixture.

How the little hands can help

  • Let the little hands wash and grate the vegetables.
  • They can break the eggs and add them to the bowl.
  • The little hands can also mix the mixture with their hands, ideally wearing gloves.
  • Then, allow them to form the trahanokeftedes.

 100 g carrots, grated
 2 eggs

Continue by adding the trahanas, the olive oil, the cheeses, the parsley, the oat flakes and flour, and the spices and mix with gloved hands until homogenous.
