This Easter, if you don’t have the time to make tsourekia, I have a solution that’s quicker and easier even compared to the tsoureki pancakes! That’s the easter energy balls with tsoureki aroma—yes, you read that correctly. They’re simply A-M-A-Z-I-N-G, or as the little hands declared, “very, very tasty!” You’ll need just 10 minutes and only 5 ingredients to make them, and that’s the way to eat “tsoureki” all year round! Come with me and let me tell you more.
What we are going to need
- Medjool dates. I’ve written about their nutritional value as well as how much I love them here. Of course, you can use normal dates as well, but they’ll need soaking before processing.
- Oat flakes. I always prefer whole-grain oat flakes. If you’re following a strict gluten-free diet, find oat flakes that are clearly marked as gluten-free. Oats don’t have gluten, but if there’s no marking, then there are traces.
- Hazelnuts. I wanted our energy balls to have something resembling chocolate tsourekia, and since I had some hazelnuts I added them, and they truly did.
- Spices. How could they have a tsoureki aroma without the necessary spices? Ground mahleb, cardamom, and mastic.
- Honey. Only for children over the age of one. You can skip it since the dates are granting us some of their sweetness here. Also, you can substitute it with white petimezi, maple syrup, and more.
For the coating
- Almonds. I wanted to cover them with almond flakes so that they resemble tsoureki even more, but I didn’t want to stick to it. I ended up using almond flour.
Tips
- To puree the Medjool dates, you should use a strong food processor though you’ll still need to take breaks. If you use normal dates, soak them for 5 to 10 minutes in warm water before processing. In any case, you should use them at room temperature.
- They can be consumed right away, but in order for them to thicken up, you’ll need to refrigerate them for at least 2 hours.
- Store the energy balls with tsoureki aroma in a glass jar in the fridge for a few days.
- They can be stored in the freezer for 6 months.
- You can add toppings to them or eat them as they are.
- Improvise, play with the ingredients, and let your children make them. Believe me, they’ll seem even tastier.
How the little hands can help
- They can add the ingredients (which you’ll have prepared and weighed, then set in front of them) and mix them.
- Older children can read out the recipe to you or weigh the ingredients themselves.
- Their favourite contribution will be to shape the energy balls.
- Of course, they can also help tidy up the kitchen later.
