Fluffy and healthy chocolate waffles in 2 versions

Gluten free, or with carob

I’ve been making these chocolate waffles often ever since we first tried them out. To be precise, it’s the little hands that keep asking for them, since they love them, and with good reason! They’re tasty, they’re very tasty, they’re incredibly tasty… And they’re fluffy, healthy, and chocolatey, and you can make them in just 15 minutes, that’s how easy they are! But the best of all is that the recipe can easily be adjusted to the ingredients I have in my pantry or fridge, which means that we can make them in at least two versions! Isn’t that great?

What we’ll need

  • Eggs. The only alternative, I think, that I haven’t tried is making these chocolate waffles for vegans, using an egg substitute. They could theoretically be made with flax “eggs”. If you go with my recipe as it is, choose organic eggs or free-range eggs.
  • Tahini. I’m mostly using whole grain tahini, and you can’t even tell in the final result. Alternatively, you can use the same quantity of any nut butter.
  • Milk. As I mentioned before, this recipe can be adjusted depending on what you have in your fridge, so any kind of plant or animal milk can be used. If you don’t want to use milk, then you can add some water to yogurt and use the same quantity as the milk.
  • Sweetener. White petimezi (grape molasses), maple syrup, carob syrup (for extra chocolatey aftertaste), or honey (for kids over the age of one). Use whatever you have on hand, and whatever you like. All of the above except honey are good for kids over 6 months old, but you should remember that they are sweeteners and as such need moderation, or you can simply skip them altogether.
  • Flour. Here we go! Use almond flour for a healthier gluten-free version, or all-purpose flour for a more classic version. Both will make your chocolate waffles tasty and fluffy, but to be honest, the almond flour will elevate them to amazing heights. Of course, you can use both in equal portions.
  • Cocoa or carob powder. In both cases, your waffles will be tasty and chocolatey. Both are allowed for kids over the age of 6 months old, and both are healthy and nutritious, with carob powder holding a special spot in our heart.
  • Olive oil.

Why 2 versions?

To be fair, this recipe has more than two versions! I’d consider this a recipe for all occasions, one that you’ll never grow bored of! Do you want to make it without gluten? Use almond flour and it’s ready. Do you want carob waffles instead of chocolate? Easy! Do you want to avoid any dairy? That’s also possible! The two main versions are the gluten-free version and the normal one with gluten, depending on the flour, but you can create any version you want for your healthy waffles, depending on your mood and ingredients.

Tips

  • The quantities mentioned here make about 8 to 10 waffles, depending on the size of your waffle maker.
  • They keep for 3 to 4 days in the fridge.
  • You can store them in the freezer for 3 to 4 months! To thaw them, just put them in the fridge the night before.

What if I don’t have a waffle maker?

No problem at all! Just make the mixture and bake it in a nonstick pan, for chocolate pancakes!

How can the little hands help?

  • Older kids can weigh the ingredients while the little kids can add them after we give the ingredients we have already weighed.
  • They can mix the ingredients.
  • You can help them transfer the mixture to the waffle maker.
  • Give them topping choices. Set the available ingredients in front of them so that they can serve their waffles any way they want and allow them to improvise!

 2 eggs
 80 g whole grain tahini (2 tbsp)
 140 g coconut milk, or any other milk
 30 g sweetener of your choice (honey for kids over the age of one, or white petimezi, or maple syrup) (3 Tbsp.)
 10 g olive oil (2 tbsp)
 70 g almond flour or all-prupose flour
 10 g cocoa or carob powder
 2 tsp baking powder
 coconut oil (or olive oil) for the waffle maker
Toppings
 2 sliced bananas
 1 package of raspberries or any other fruit
 honey with cocoa (for kids over one year old)
 puffed quinoa

Preheat the waffle maker and spread some coconut oil on its surface.

Whisk together the eggs in a bowl.

Add the tahini, the sweetener, the olive oil, and the milk, and whisk well.

Continue by adding the flour, the cocoa, and the baking powder, and mix until homogenous. The correct texture should be one that runs from the spoon without it being too thick or too runny. If it’s too thick, add 1 Tbsp. milk.

Move the mixture to the waffle maker with a spoon (about 1 and 1/2 Tbsp. for each waffle), close the waffle maker, and let it cook.

Repeat the previous step until we’ve used all the mixture, and if need to, spread some more coconut oil on the waffle maker between waffles.

Serve with the toppings of our choice and enjoy!
