Winter is coming and people are already catching colds. What do we all want in days like these? A hot soup, of course! And I’m not talking about any soup, nor the classic chicken soup. I’m talking about an incredibly tasty special veggie pasta chicken soup! Special because your kids will love it—no, the whole family will love it, that I guarantee—special because it has vegetables, special because it smells like winter, but also special because it has the tastiest special Mama Irene vegetable pasta from fresh vegetables. Let’s get into it.

What we are going to need for pasta chicken soup

  • Chicken. Preferably cut in pieces. If you request that your butcher cut it for soup, he’ll most certainly help you.
  • Special fresh vegetable pasta from Mama Irene. All pasta products from Mama Irene are handmade, and it’s the best I’ve had. The vegetables are fresh, handpicked, they’re added to high-quality dough, and they have playful S shapes. What’s even more special is that they have no added salt, they’re vegan, with natural ingredients, and it’s one of the many choices from the “Happy kids” category, all prepared with love for our little kids in Irene’s workshop.   • Vegetables. Carrots, potatoes, sweet potatoes, cauliflowers, onions, celeries. The vegetables should be cut properly into small pieces, both to form the broth properly, and also to be cooked quickly.
  • Olive oil. Our favorite virgin olive oil.
  • Curry. Optional.

Tips

  • My recipe may be for cooking in a pressure cooker, but you can easily prepare the special veggie pasta chicken soup in a pot. The only thing that will change is the time to cook, since the chicken will need about 40–60 minutes to cook, depending on the chicken, and the vegetables will need to boil for 15–20 minutes.
  • Cut the vegetables in playful shapes to make this chicken soup even more special and attractive. You’ll find vegetable cutters here.
  • For a vegan version of this soup, use vegetable broth. You’ll need 4 large cups.
  • If you don’t want to sauté the onion, then steam the vegetables with water.
  • You can serve it with a little lemon.
  • For picky eaters, I suggest serving the vegetables and the pasta on a sectioned plate.
  • You can play around with the vegetables, depending on what you have available. For example, leeks complement the taste. Also, don’t worry about the cauliflower, you won’t even notice it.
  • If you have chicken leftover, you can store it in the freezer.
  • The leftover broth can also be stored in the freezer, and reinforce the taste and nutrition of a future meal.

How can we offer it during BLW?

Initially, I should note that this chicken soup isn’t as thin as other more classic soups. However, for infants that are self-feeding with the baby-led weaning method, we can offer the vegetables and the pasta without the fluid. You’ll either use preloaded spoons (fill the spoon yourself and leave it in front of them), or you can offer the vegetables and special pasta for them to grab with their little hands. In this second case, for babies aged 6 to 9 months, you can cut the vegetables in long and narrow shapes that they can grab more easily, and for older babies, you can follow the directions as normal.

How the little hands can help

  • Washing and cleaning the vegetables.
  • Cutting the vegetables with the special cutter.
  • Adding vegetables and pasta to the cooker under your surveillance, and stirring.

 1 kg chicken, in pieces
 2 cups special fresh vegetable pasta by Mama Irene
 2 tbsp olive oil
 2 small sweet potatoes, diced
 2 carrots, sliced
 1 medium onion, chopped
 1 large potato, diced
 ¼ cauliflower, diced
 ¾ tsp garlic powder
 2 celery sticks, chopped
 ½ curry (optional)
 salt (for kids older than 1)
 pepper

Put the chicken in the pressure cooker (or the pot), cover it with water, and allow it to start boiling.

When it has started boiling, close the cooker.

When the valve has pushed up, lower the heat and boil for 20 minutes.

20 minutes later, turn off the heat and remove the cooker.

When the valve has lowered, open the cooker, and strain the chicken. Keep the broth and the chicken in different containers.

In the cooker or a big pot, put olive oil (or water for little kids) over medium heat.

When the olive oil is hot, add the chopped onion and cook until it is soft and browned.

Continue with the rest of the vegetables and the curry, add salt and paper, and sauté for 3–4 minutes, mixing with a wooden spoon.

Add 4 large cups of the chicken broth you made, turn up the heat, and close the cooker.

When the valve comes up, lower the heat and boil for 5 minutes.

After the 5 minutes, remove from the heat and let the valve lower.

Open the cooker and return it to the heat, at high heat.

Add the special fresh vegetable pasta from Mama Irene and boil for 4 minutes.

4 minutes later, remove from the heat and let the pasta get cooked (and grow larger) for 4–5 minutes.

Cut the chicken in pieces.

Serve hot with the chicken and freshly ground pepper.
