Who doesn’t like waffles? Especially when they’re tasty and fluffy, and come out hot from the waffle maker, still crunchy on the outside. Yummy! I really wonder why I haven’t shared this recipe with you earlier, since I’ve made it so many times. They’re incredibly easy, and we all love them—right now, as I’m writing this, the little hands are asking when we’ll make them again. So, I have oat waffles for you today, and let’s see what we’re going to need, what substitutes we can use, and what tips I have that might provide answers to your questions. Let’s go!

What we are going to need

  • Oat flour. You’ll be able to find oat flour in most grocery stores, as well as stores with organic products. Prefer buying whole-grain oat flour. You can also grind the oat flakes yourselves until they become a powder which you can use as flour. Oats don’t contain gluten, however there might be gluten traces, so if there’s someone with an intolerance to gluten, you should choose products with the sign “gluten free.”
  • Eggs. You’ll need 2 eggs. Last time I made the oat waffles, I had small eggs from my father’s chickens, and I used 3. Organic and free-roam eggs are generally the best.
  • Dairy. Yogurt and milk. I used sheep’s products, but I’ve made waffles with plant products, too. If you don’t want to use any milk, you can add some water to the yogurt and use the same quantity as the milk I mention below.
  • Nut butter. I used peanut butter, but you can use tahini or any other nut butter you want. I’ve made them without any, as well (as you can understand, I’ve made the oat waffles quite a few times).
  • Leavening agent. Baking powder and baking soda.
  • Cardamom. You can skip it or use cinnamon, too.
  • Coconut sugar. Optional.
  • Coconut oil. For the waffle maker.

Tips

  • The recipe is for 8 small oat waffles.
  • We ate them with cream cheese mixed with yogurt, but also with peanut butter, honey with cocoa, fruits, and puffed quinoa.
  • Of course, you can make them in a larger waffle maker, you’ll just end up with less waffles.
  • You can store them in the fridge for up to 3 days.
  • You can also store them in the freezer for 3–4 months. When you want to eat them, put them in the fridge the night before, or use a microwave oven to reheat them.

 60 g oat flour
 50 g yogurt
 50 g milk
 1 tbsp peanut butter
 1 tbsp coconut sugar
 1 tsp baking powder

  tsp cardamom

Whisk the eggs in a bowl.

Add the yogurt, the milk, the nut butter, and the coconut sugar, and mix.

Continue by adding the oat flour, the baking powder, the baking soda, and the cardamom, and mixing well until homogenous. Then, set aside for 5 minutes.

Preheat the waffle maker and spread some coconut oil on the plates.

Bake in the waffle maker for 3 minutes (or however long your waffle maker needs).

Serve with cream cheese mixed with yogurt, with fruits, or with a nut butter.
