Baked sweet potato balls

So, what’s for dinner today? Juicy baked sweet potato balls for the little hands, a variant of the vegetable burgers. It’s a very tasty and nutritious recipe for a family meal that everyone will love. Who doesn’t love burgers? I guarantee that even the most demanding little palates will be happy with the result.

What we are going to need

  • Sweet potatoes. I’ve written here regarding sweet potatoes. I chose the orange variety.
  • Other vegetables. Carrots, zucchinis, onions, eggplants, and an herb like parsley.
  • Eggs. To thicken the mixture. You can try a substitute that may work, like chia “egg” or flax “egg,” but I haven’t tried them myself.
  • Olive oil.
  • Oats. The oats help by absorbing the sweet potatoes’ liquids so that the mixture can thicken. I chose to use oats in both forms, flakes, and flour, and that’s why you’ll see both oat flakes and oat flour in the ingredients. If you have only oat flakes, you can grind them and use them as flour.
  • Cheese. The cheese I used was grated anthotyros. In contrast to the rest of Greece, in Crete, we mean “dry” anthotyros, which we mainly use grated, and just like the other white cheeses, it’s low in salt. You can choose to use the cheese you like the most or the one you have in your fridge right now.
  • Spices. Turmeric, thyme, ginger powder, and oregano.

Tips

  • If you need to, you can add more oats.
  • You can use only oat flakes or only oat flour, and you can also grind your oat flakes to flour in the food processor.
  • This recipe has no salt, which is best for children, and the taste is covered by spices and herbs, but you can add more if you want, or adjust the spices to your preference.
  • Let the potato balls cool before serving them with a spatula. If you hurry too much and they’re still warm, they’ll break apart.
  • You can combine the sweet potato balls with salad, rice, or quinoa, or even use them as burger patties. We ate them with rocket greens, cherry tomatoes, and avocado. The avocado was incredible in combination with the rest.

 500 g sweet potatoes (4 small ones)
 1 small carrot
 1 large zucchini
 1 medium onion
 2 small eggplants
 1 egg
 50 g olive oil
 60 g oat flakes
 30 g grated anthotyros or any other cheese
 30 g oat flour
 1 tbsp heaped, chia seeds or ground flax seeds
 3 tbsp chopped parsley
 ¾ tsp turmeric
 1 tbsp thyme
 ½ tsp oregano
 ½ tsp ginger
  pepper

Clean and peel the vegetables, then grate them finely or process them in the food processor.

In a large mixing bowl, put all grated vegetables, the eggs, the oats, the spices, the herbs, the chia seeds, the olive oil, and the grated cheese.

Mix the ingredients with gloved hands until homogenous.

Move the mixture to the fridge for 20–30 minutes until thicker and easier to handle.

Meanwhile, line a large baking sheet with parchment paper and preheat the oven at 200°C, set to fan.

After the mixture is thicker, form your potato balls with your gloved hands.

Move the balls to the baking sheet, making sure they don’t touch, and bake for 25–30 minutes.

Let them cool and serve. I highly suggest accompanying them with avocado!
