What is everyone looking for during the summer? An easy snack we can take with us without fuss or melting, that’s healthy, nutritious, delicious, and fill us with energy. Tada! I present to you the ultimate snack, none other than the soft strawberry banana oatmeal bars! They have no dairy, no eggs, no butter, no refined sugars, no gluten, are vegan, and depending on the sweetener you choose (if you do choose any, because they’re great with none, too), they’re suitable for people aged 6 months up to 106 years old. You’ll just need a bowl and 10 minutes to make them!

What we are going to need
- Strawberries. I know their season is coming to its end, but you can still get some. And even though they give an amazing taste to the bars, you can substitute or skip them.
- Bananas. Bananas are necessary for these oatmeal bars because they help both as a sweetener and as a binder, acting as an egg substitute. The bananas must be ripe—the riper they are, the sweeter the bars will be—so it’s a good way to use your dark, ripe bananas.
- Oat flakes. Prefer whole-grain oat flakes.
- Peanut butter. I love it and I can’t resist it, nor can I stop using it. You can substitute it with any nut butter or tahini.
- Sweetener. I’ve made them with honey and maple syrup, and both had an equally tasty result. Choose whichever fits your own needs. Don’t forget that honey must not be given to children under the age of one, and it’s good to avoid sweeteners even after that age. If you want to skip it, you can.
- Cacao nibs. You might have seen them in my recipes, or you might have not. Cacao nibs are a healthy alternative to chocolate drops. They’re an optional ingredient, but if you want a chocolatey base for your strawberry banana oatmeal bars, then you shouldn’t skip it. Cacao nibs are crumbled bits of dried cacao beans, with no sugar or processing, and with a bitter chocolatey taste. You should find them in most stores selling organic products.

Tips
- You can store the bars in the fridge for up to 4 days.
- You can store them in the freezer for at least 3 months.
- Keep aside some chopped strawberries and cacao nibs to sprinkle over the mixture before baking for a prettier result.

Preheat the oven at 180°C.
Line a square oven-safe baking tray with parchment paper and set aside.
Add the bananas in a bowl and mash them with a fork or a potato masher until they’re pureed.
Add the peanut butter and the sweetener and mix well.
Continue by adding the oat flaks and mix until homogenous.
Finally, add the chopped strawberries and the cacao nibs (if you add any), and mix gently and well with a spatula.
Move the mixture to the baking tray, spread with the spatula, and level.
Bake in the preheated oven for 20 minutes.
Remove from the oven and set aside to cool before cutting in pieces and enjoying.
