Strawberry yogurt popsicles for kids

Summer is knocking on our door, making our desire for ice-cream wake up early. So, on these first hot days, I rushed to prepare the year’s first ice-cream for the little hands, with the simplest ingredients. Its success is a given since strawberries and yogurt are a beloved combination, creating the tastiest version for a kid-friendly strawberry yogurt ice-cream, suitable for babies over the age of 6 months. The secret behind its amazing taste is in how strawberry is handled. Are you ready for me to reveal everything to you?

What we are going to need

The basics

  • Strawberries. It’s the best time for strawberries. Prefer organic strawberries, and remember that the riper they are, the tastier. If you don’t have time to bake them (which is the best), you can process them through the food processor. 
  • Yogurt. I used sheep yogurt, which is the yogurt the little hands eat. You can use goat, cow, or plant yogurt, whichever you like.

Optional

  • Honey. Only for children over the age of one, but it can also be skipped or replaced. Just like you’ll see me saying below, improvise depending on your tastes. 
  • Vanilla.

Improvise your own yogurt ice-cream

This yogurt ice-cream is so simple and easy that the only thing I want from you is to improvise! What do I mean? Let your imagination run wild! Do you want to add more fruits? Add them! Do you want larger strawberry pieces? Chop them larger. Do you prefer a popsicle with layers of yogurt, strawberry, yogurt again, etc.? Make it so! Do you want to skip/change/add more honey? Just do it! Do you have no popsicle moulds? Make your own with yogurt cups or paper cups. Simply play with your kids and make your own yogurt ice-cream! 

Tips

  • To avoid the creation of water crystals in your yogurt ice-cream, you should freeze it in very low temperatures and very quickly. Deep freezing them will create a better texture and lower number of crystals. So, if you have a deep freezer, prefer to leave your ice-cream there to freeze.
  • You can store them in the freezer for up to 6 months. 
  • If you don’t have silicone moulds like ours, then you might need to immerse your moulds in warm water for a few moments, so that you can remove the ice-cream from the mould more easily. 
  • The difference between this recipe and others you might have tried is that you cook the strawberries. This releases their flavour and sweetness, and I can’t begin to describe the heavenly smell.

 350 g yogurt
 250 g strawberries
 1 tsp honey (or more)
 vanilla extract
 a few drops of lemon juice

Place the strawberries in an oven-proof vessel.

Pour the honey over them and mix lightly. You can skip this or use more honey, as you like.

Put them in a preheated oven at 190°C and bake for 15 minutes.

Let the strawberries grow cool completely.

Puree the strawberries with a spoon or put them through a food processor.

Add the yogurt, the lemon, the vanilla, and the pureed strawberries in a bowl and mix gently.

Move the mixture to the ice-cream moulds, add the popsicle sticks, and freeze them for at least 4–6 hours.
