The almond flour banana bread (which can also be made with all-purpose flour) is among my top 5 favourite recipes here. So, I decided to make vegan banana bread, with only natural sweeteners—the ultimate baby-friendly recipe! So, what do we have here? Tasty vegan banana bread with dates made from oats, with no eggs, no dairy, no sugar, no butter, no mixer, and no gluten! Yes, it’s also delicious and perfect for toddlers and kids allergic to dairy or eggs, and if you skip the grated nuts, then it’s perfect even for kids that are allergic to nuts! Of course, it’s also suitable for all the mothers that are staying away from these ingredients, too. It’s suitable for our kids and for all of us who want to eat healthy and nutritious food.
What we are going to need
- Bananas. The black bananas, the ripe ones, that you don’t know what to do with them. These are the perfect bananas for vegan banana bread. Remember, the riper they are, the sweeter they taste, and by extension, the sweeter this banana bread will become.
- Dates. As I’ve mentioned often, I prefer Medjool dates, which are sweeter and softer. They’re also super nutritious. They can be replaced by normal dates, in which case you should make sure that they have no added sugar.
- Flour. I tried two versions, one with oat flour, and one with buckwheat flour. You can use any of the two, in the quantity mentioned below, or you can create your own oat or buckwheat flour by processing the respective flakes in a food processor. The only thing I’ve noticed that’s different between the two is that the oat flour rises better. Of course, you can also combine them.
- Nuts. I always have a jar of grated nuts in my house for the little hands. Nuts make the result even more nutritious while granting their incredible flavour to this vegan banana bread. If you want to skip them, you’ll probably need to add a little more flour.
- Lemon. If you don’t have freshly juiced lemon, you can add 1 Tbsp. white vinegar. In combination with baking soda, it helps the bread rise.
- Olive oil.
- Coconut milk. Choose a plant drink with no sugar or additives. Alternatively, you can make your own plant milk by mixing grated coconut or oat flakes with water in a blender, and then squeezing through a cheesecloth.
- Cinnamon. I use Ceylon cinnamon.
Tips
- The recipe is good for babies over the age of 6 months old if you’re following the BLW method.
- Store your vegan banana bread in an airtight vessel or a cake box out of the fridge for 2 days or refrigerate for up to 4 days. Of course, you can also freeze for up to 3 months.
- The dates were weighed without their pits, and they were then soaked in warm water to be used in the banana bread, in order to release their sweetness.
If you’re looking for more vegan recipes:
Preheat the oven at 180°C.
Line a long and thin mould with parchment paper.
Process the soaked Medjool dates with a little of the milk, just enough to cover them, until they’re pureed.
Mash the bananas with a fork in a mixing bowl.
Add the bananas to the pureed dates and the milk, the rest of the milk, the olive oil, and the lemon, and mix all ingredients well.
Then add the grated nuts, the cinnamon, and the flour which you have already mixed with the baking powder and the baking soda and mix well.
With the aid of a spatula, transfer the mixture to the mould, and push with the spatula so that it fills the form adequately.
You can decorate with bananas if you want.
Put the mould in the preheated oven and bake for 45–50 minutes or until a knife emerges clean after being immersed inside.
