Incredibly easy vegan strawberry mousse

What happens when you’ve decided to make something specific (a strawberry tart, as a… random example) and as you’re making it, you realize that you’re missing half the ingredients? If that happens, then you make an incredibly easy, delicious, airy, velvety, vegan strawberry mousse with just 3 ingredients. What we are going to need

  • Canned coconut milk. Check the ingredients before buying. You can use canned coconut cream as well, but you shouldn’t use normal coconut milk, the one you may find in the fridge.
  • Strawberries. Red, fresh, sweet strawberries, and the protagonist of the recipe. Prefer organic strawberries as their fruits with one of the highest concentrations of pesticides.
  • Maple syrup. The quantity I write is indicative, as always. Adjust to your tastes. You can keep it less sweet and add more sweetener when you serve it. Finally, you can use honey or any other sweetener you might prefer.

Cool, right from the fridge. I served my own strawberry mousse in glasses, but since the quantity was too much for the little hands, I moved some to his cloud-shaped bamboo plate and accompanied it with fruits. He didn’t try it that time, but the next time he truly enjoyed it. I had placed a layer of ground nuts on the bottom of the glass, and I had added fresh strawberries and shredded coconut on top of the mousse. Dad added additional syrup in his own toppings. No matter how you serve it, one thing is certain: you’ll love it!

 400 ml frozen canned coconut milk
 150 g 150 gr strawberries
 1 tbsp maple syrup (adjust the quantity to your tastes)
  ground nuts

Place 2 tablespoons of ground nuts on the bottom of the glasses and set them aside.

Puree the strawberries in the food processor with the maple syrup. The result should have no pieces at all.

Separate the solid and the liquid parts of the coconut milk.

Place the solid part in the mixer bowl.

Run the mixer at medium speed for a few minutes to fluff up the coconut milk.

Add the strawberry and syrup puree in the mixer and mix the mousse for 1–2 more minutes.

When the mousse is homogenous, spoon it to the glasses.

Refrigerate the mousse for 2–3 hours at least.

Serve with fresh strawberries, ground nuts, or shredded coconut.
