Sometimes, Dad takes up the kitchen, and the result is always special! This time, he made his favourite carrot cake, adjusted for the little hands, and the result justified his love for it. JUMP TO RECIPE
The recipe is so easy that even our children can make it. The hardest part is grating the carrot, which can be grated finely, passed through a special attachment for a kitchen machine, or through a food processor for ease.
This cake is perfect for all of you who don’t eat dairy since it uses no milk or yogurt. Of course, like most recipes in my blog, it has no sugar and has only the absolutely necessary quantity of honey.
For the recipe, you’ll need
- Carrots. Prefer organic carrots. They may be smaller, but they’re tastier and “cleaner.”
- Olive oil. Cakes can be delicious without butter, and they’re healthier with olive oil, too.
- All-purpose flour.
- Walnuts. Process the walnuts so they can be eaten even by babies. You want them turned into powder.
- Eggs. Prefer organic and free-range.
- Honey. Skip for children under the age of one and adjust to your liking and tastes if you want something sweeter.
- Spice. You can’t make carrot cake without spices like cinnamon and nutmeg.

Preheat the oven at 180°C.
Whisk the eggs well in a bowl and add the olive oil and the honey and mix well!
Add the baking powder, the cinnamon, the nutmeg, the walnuts, and the raisins (if you add any) and mix.
Add the carrot, mixing well.
Finally, add the flour slowly, mixing well until a dough forms.
Oil the cake mould or tin well and pour the mixture in.
Bake for 45 minutes or until a knife emerges clean after being inserted inside.
Let it cool completely before removing from the mould or tin and enjoy.

The list of ingredients does not include baling powder, how much do you add?

I’ve just popped the cake in the oven. I noticed that you mentioned baking powder in step 3 but you didn’t include it in the ingredients list, or give a quantity anywhere. I went ahead and added just over a tsp. Hopefully that was right.
