This recipe could have many other titles, like “the carrot crackers that the little hands loved” or “the carrot crackers that were incredibly popular” or “Silver Alert: carrot crackers disappeared!” In short, this recipe makes crackers that will vanish before you can say “ginger!” JUMP TO RECIPE

In general, the little hands love crackers and breadsticks, so I usually make one batch from either, every week, at most every ten days. I make them myself so that I know what’s inside, and also make them as nutritious as possible. I always add a vegetable inside, make sure they have as little gluten as possible—or even none at all, like these ones—be easy, because I want the little helper to be able to help, and of course, make them delicious. Recently, though, when we’re at home, I’ve been giving him raw vegetables as snacks more and more often, so I hadn’t made him any crackers or breadsticks for a while. The Little Hands took things into their own hands and shouted “kaaaa, kaaaa.” One, two, three times, well, the boy is right. I had to make some crackers.

So, this time I decided to make them with carrot, the orange vegetable that the little hands rarely tried. I took 1 large carrot and 2 smaller ones, grated them, weighed them, squeezed them dry, and started making carrot crackers! These were the most successful crackers I’ve made after the beetroot crackers—or maybe, even more! 

The only thing that’s for sure is that carrot has great nutritional value, but as I said regarding the carrot pancakes, this recipe has no gluten, and ginger makes the carrot crackers even better while granting them its gifts. So, many things are quite certain for this recipe—its success, along with them!

What you’re going to need to make this recipe

  • Carrots. Prefer organic ones. Grate them finely and squeeze them well in a cheesecloth. 
  • Oat flour. If you have none, you can process oat flakes in a food processor and make some of your own.
  • Eggs. Prefer free-range eggs if you don’t have any from your home village or town.
  • Grated cheese. I usually prefer local graviera, but you can use anything you like. For children younger than one-year-old, choose a low-salt cheese.
  • Chia seeds. Have I mentioned their benefits?
  • Ginger powder. Our familiar ginger, with its spicy taste. If you’re not a fan, skip it. I left some of the crackers without any, and they were delicious either way. You can also add another spice, like paprika.

How to offer them to the little hands

The truth is that he usually eats them with his hands or while we’re taking pictures of them together—because he’s been eager to help, lately—like he did this time. After he ate half the jar on the first day, the second day I took advantage of the time he “talked” on the phone with his grandmother and made a complete midmorning snack for both of us. Guess who ate the most! So, I took my favorite lunchbox, which has been very handy during our walks, and made a quick peanut butter dip, cut some cucumbers, and added some celery sticks prefilled with the dip. He ate them all gladly, except for the sticks, which were the first time he had eaten them.

For the crackers
 100 g grated carrot
 150 g oat flour
 30 g grated cheese (I used Cretan graviera)
 2 eggs
 3 tbsp chia seeds
 1 ½ tbsp olive oil
 ½ tsp ginger powder
For the dip
 2 tbsp peanut butter
 4 tsp yogurt
 ¾ tsp sweet paprika

Preheat the oven at 180°C, set to fan.

Line a large baking sheet with parchment paper.

Put the grated carrot in a cheese cloth and squeeze it dry.

Add the eggs in a bowl and whisk them well.

Add the squeezed carrot and the olive oil, and mix well

Continue by adding the grated cheese, and mix.

Finally add the chia seeds, the ginger, and the flour slowly.

Mix the ingredients with your hands well until you have a dough that doesn’t stick.

Move the dough to a piece of parchment paper, spread it a little with your hands, and cover with a second piece of parchment paper.

Spread the dough with the rolling pin until you have a thin layer.

Remove the second parchment paper.

Cut the crackers in the shape and size you want, with a knife or a cookie cutter.

Move the crackers to the baking sheet, making sure they don’t touch each other.

Bake for 25 minutes. Time may be different for each oven.

After you remove from the oven, let the crackers cool on a cold surface.

For the peanut butter dip

Mix all the ingredients well in a bowl.
