And if your first thought was “But, how can pizza be replaced, and by cauliflower at that?” then I have to tell you that “It can!” And not only it can, but it’s incredibly tasty, something that will be a pleasant surprise! The combination of cauliflower with the cheese and the eggs create this different base that is lacking in nothing when compared to the classic one. On the contrary, I’d say that the classic pizza is lacking in how healthy it is, while the cauliflower pizza is also gluten-free and delicious, and most of all, nutritious thanks to the cauliflower!
Cauliflowers are vegetables rich in vitamin C, vitamin B, calcium, and magnesium, and they have anti-cancer and anti-inflammatory properties. But cauliflower also has a strong smell, and that is a deterrent for many and especially children. And while I don’t subscribe to the philosophy of “hiding ingredients so that they eat them,” I do believe that I should “make the foods that I love as nutritious and as healthy as possible!” And that’s what happened with this healthy pizza alternative.
What we are going to need (for a large baking sheet)
- Cauliflower, how else would we make a cauliflower pizza? Prefer organic cauliflowers.
- Eggs, preferably organic and free range.
- Corn flour is the best to bind our base since it’s very absorbent as flour.
- Grated cheese of your liking. We selected local graviera.
- Cream cheese. I’ve selected a local, creamy, soft goat cheese as well, which I thought made the result soar.
The little hands ate half of it for lunch from his eco-friendly bamboo plate, saying “yum yum yum” all the while! If you cover the base with enough cheese and toppings of your choice, closing your eyes you won’t be able to tell there’s cauliflower anywhere.
I chose to cover our pizza with homemade tomato sauce (though we often eat pizza without that), grated cheese, rocket, fresh tomato, and any other vegetable that happens to be in our fridge. As you’ve probably noticed, we avoided processed deli meats, which are far from healthy, and certainly not good for little children as they contain even sugar.

The healthy version of pizza!
Preheat the oven to 200°C, set to fan.
Cut the cauliflower in florets (without the stems) and processes them in the food processor into something resembling couscous. This is the hardest part if you don’t have a food processor large enough.
Place the processed cauliflower into a bowl, add the eggs, and mix well.
Add the cheeses and mix, then add the corn flour gradually.
You’ll end up with a crumbly dough, don’t worry about its texture.
Line a baking sheet with parchment paper, then spread the dough by pressing thoroughly with your hands, creating the base.
Place the baking sheet in the oven and bake for 15 minutes until it has yellowed.
