Salmon is a fish famous for how nutritious and delicious it is! How can anyone resist its deliciousness? But when we usually think about “salmon,” we imagine frying it in a pan, and not that it can be made in the oven. However, it’s equally juicy and delicious (yes, it can be even more delicious). The little hands got to know salmon that way and loved it deeply. I won’t hide that I was anxious about whether he’d eat it or not, especially since while he does love fish, here we have a completely different flavour and texture, and I also offered it quite late. However, when he tried it, he loved it. I believe that the lemony taste helped, as well as the fruit’s amazing aromas.

The reason I offered it late was that I wanted to start with fresh, but it’s hard to find trustworthy fresh salmon in our country. So, I avoided it, and at the same time as searching for wild salmon-bearing the sign MSC, as my paediatrician had suggested. When I found it, I knew it was finally time to introduce salmon.

The MSC (Marine Stewardship Council) certification is found in sustainable fishing fish. The fish with this certification comes from ethical fishing that respects the sea and fish. The certification is given to fishing fleets that fish in a sustainable way, under observation conditions. That way, only a certain part of the fish population is being removed, a part that will not prevent them from reproducing. (Source: WWF) Additionally, it’s good to check where the fish we’re buying was found.

Nutritional value

Salmon, as I mentioned, is a fish with a very high nutritional value, rich in Omega-3 fatty acids, which are necessary for all of us. It’s also a great source of vitamin D, vitamin A, proteins, selenium, and calcium. In short, it’s a fish that we want to have and should have on our table.

For the recipe, you’ll need

You won’t need to use too many utensils to make baked salmon, nor will you need strange or too many ingredients. Who doesn’t have lemon, olive oil, garlic, and herbs in their home? That’s why I told you it’s very easy to make some juicy, healthy, and delicious salmon and offer it to your little ones and to yourselves. More specifically, you’ll need:

  • Wild salmon fillets. If you have fresh salmon that’s even better, but if you get some frozen salmon, don’t forget to select it according to what I wrote above.
  • Olive oil.
  • Lemon.
  • Herbs like basil, thyme, oregano, and tarragon, will simply make the dish soar. 
  • Garlic for its flavour.

Serving suggestion

The little hands had salmon on his favourite eco-friendly panda-shaped bamboo plate, accompanied by millet, corn, and boiled beans. Millet needs boiling for 10 minutes and it’s ready, so it’s the ideal choice to make while the fish is being cooked. Of course, you can accompany it with brown rice, but don’t forget to add some vegetables and make it into a complete meal.

 4 salmon fillets
 2 tbsp olive oil
 1 lemon
  tbsp thyme
  tbsp oregano
  tbsp basil
  tbsp tarragon
 1 small clove of garlic, mashed (optional)
  salt (for children over the age of one)
  pepper

Preheat the oven to 200°C.

If you’re using frozen fillets, they should be placed in the fridge to defrost, and then allowed to come to room temperature for at least 15 minutes. Then, use paper towels and gently pat the fillets dry, removing their moisture.

Place the fillets in a baking sheet that’s been lined with parchment paper.

Salt and pepper your fillets (skip the salt for children under the age of one).

Mix the olive oil with the juice from half a lemon, the garlic, and the herbs thoroughly.

Brush the olive oil, lemon, and herb mixture with a silicone brush everywhere over the fillets, as well as on their sides.

Thinly slice the rest of the lemon and place the slices on the fillets.

Bake in the oven for 18 minutes.
