Regarding sweet potato

The sweet potato was one of the first 3 vegetables the little hands tried and tasted the first time when he was just 6 months old. While he likes the flavour, he never chooses it himself when it’s on his plate either by itself or with other vegetables… It may be the orange colour, or it may be the soft texture, anyway, the fact is that he’ll rarely eat it.

So, since it’s super nutritious and since it’s always in the house even though the little hands don’t eat it, I made sweet potato pancakes! In the past, I had made them into cookies, and in general, its sweet flavour allows it to be integrated with all kinds of recipes, something it has in common with the beetroot. I offered the sweet potato pancake on our beloved eco-friendly bamboo plate, creating a lion which the little hands love from tangerines and bananas.

And before I write a few words about our main ingredient and this recipe, I want to share that the little hands said “roooar, roooar,” seeing the pancake and the tangerines! Before I had even placed the eyes, he recognized it as a lion, the animal that he’s obsessed over these days! Try to make the pancakes yourselves and impress your little ones.

Regarding sweet potato

There are many varieties of sweet potatoes, but I generally prefer the orange sweet potato, though you’ll find purple, yellow, white, and red sweet potatoes. When compared to classic potatoes, it has a lower glycaemic index and a higher nutritional value. It’s rich in vitamins A and C, in many nutrients, and is a great source of energy. It also has antioxidizing and anti-inflammatory properties. What does that mean? That the sweet potato must necessarily be integrated into our diet! Roasted, boiled, steamed, in soups, pureed, but also in preparations like this recipe.

What you are going to need for sweet potato pancakes

  • Sweet potatoes, of course! Select the variety you like. The sweet potato can be cooked quickly, so cook it how you want, and mash it with a fork into a puree. I usually steam it.
  • Eggs prefer free-range or organic.
  • Oat flakes. You can also use oat flour, but you might possibly need a different quantity.
  • Honey. Only for children over the age of one.
  • Cinnamon, which creates an excellent combination with sweet potatoes. It can be substituted by
  • Nutmeg or you can use both.
  • Baking powder to make our pancake rise. You can skip it, of course.

Ingredients for 4–5 pancakes
 5 tbsp sweet potato puree
 2 eggs
 70 g oat flakes
 1 tbsp honey (for children over the age of one)
 ½ tbsp cinnamon
 ½ tbsp baking powder
  a little nutmeg (optional)

Beat the eggs in a bowl and add the rest of the ingredients, mixing thoroughly. You can process them in the food processor, as well.

Heat up a non-stick frying pan over low heat first, then after it has heated up completely, spoon the mixture and cook patiently, until little holes appear on the pancake’s surface. Then, turn over.

Cook for 1 more minute, then enjoy.

Serve with nut butter and honey.
