The dish of our memories

This recipe is simple, delicious, and nutritious, and thanks to this recipe, it was the first time I saw the little hands truly enjoying his food. He was just 7 months old when he first tried the orange and turmeric chicken thighs. JUMP TO RECIPE

The recipe was created one morning when I was observing Grandpa’s oranges, which the little hands didn’t want to try. Thus, they became juice and went in his lunch along with other ingredients I love, like turmeric.

Why I used chicken thighs

Chicken thighs are very nutritious, while their meat is soft, making it perfect for the start of baby-led weaning. But the best thing is that you can easily cut the leg and separate it from the rest of the thighs, which was what I did. Thus, it was very easy for the little hands to grab the bone and eat it. But you must be careful, the bone shouldn’t be broken or sharp. I honestly couldn’t believe how much he would enjoy it.

Now, the little hands want the meat cut into small pieces, served on his favourite bamboo plate, because he has developed fine dexterity, and it’s a better game having little pieces in front of him. However, when he was about 7–8 months old, it was his favourite food and was also quite fun. And if it seems impossible to you, you just have to try it. 

A few details regarding the orange and turmeric chicken:

  • I bake the chicken in a parchment paper “pouch” so that it absorbs all liquids and flavours, but you can do it without that, of course.
  • I always accompany it with sweet potatoes cut in finger-sized sticks.
  • Depending on the season, I add zucchinis, leeks, or anything else I might happen to have in my fridge. I always make sure they’re cut in appropriate sizes to bake them correctly, and to make them easier to handle for the little hands.
  • In the last 15 minutes of baking, I open the parchment paper to roast the chicken more.
  • Turmeric is a precious spice that gives us its benefits when combined with black pepper. Black pepper increases curcumin absorption, offering multiple benefits to our health.

Regarding turmeric

Before we go on to the recipe, I’d like to say that turmeric is one of the most precious of spices, if not the most precious. It’s coming from Asia, and in Greece, it was known as “yellow root.” It’s anti-inflammatory, antioxidizing, prevents cancer, and lowers the danger of childhood leukaemia, protecting our organism by preventing the common cold and more. In general, it’s nature’s medicine.

Add turmeric to your breakfast, your juice, your meals, rice, vegetables, and roasted potatoes. You can also try it with chicken, in the recipe I suggest, and you’ll see how great it is.

 2 chicken thighs
 3 oranges, the juice
 1 tbsp turmeric
 ½ tbsp sweet paprika
 ½ lemon, the juice
 1 tbsp oregano
 1 tbsp olive oil
  pepper
  salt (for children over the age of one)
Accompanying vegetables
 3 sweet potatoes
 1 medium onion
 3 zucchinis (when in season)
 1 leek (when in season)

Line one large piece of parchment paper or two smaller pieces (one for each thigh) on a large baking sheet.

Preheat the oven to 200°C, set to fan.

Cut the vegetables. Slice the leek, slice the onion like when making a salad, dice the sweet potato, and cut the zucchini in sticks.

Place the chicken thighs on the baking sheet(s) and add all ingredients, mixing thoroughly and spread around, mixing together. You want the spices to cover everything.

Close the parchment sheet like a pouch and roast it for an hour.

An hour later, open the parchment sheet pouch(es) and cook for 15 more minutes.
