The date bars were one of the first recipes uploaded on Little Hands, and are one of the most beloved, both by little and family hands. The little hands love these bars, which I’ve been making for a couple of years now, and how could he not? They’re so sweet and delicious! Additionally, these bars are easy to make, sugar-free, vegan, and gluten-free, and everyone keeps eating them, unable to stop!
Seeking snacks
Two years ago, and while the little hands were just one year old, I had written these thoughts: “When you have little kids and you want them to eat healthily, you realize that the hardest thing is to be constantly providing food for them. To be ready before they’re hungry, and to always have snacks available. I usually try to make the week’s snacks on the weekend, at least one savoury and one sweet, and in the middle of the week, I usually need to make more. I have noticed that he gets bored if I make the same snack many times in a row, and I’m constantly thinking of what to make.” Two years later, these thoughts as well as the little hands’ needs aren’t really different, while our love for sweet date bars is the same.
What we are going to need
- Dates. I usually select Medjool dates, which are larger in size, have a finer, sweet flavour, are very tasty, and feel fresh. Also, dried dates often have added sugar, while you’ll rarely find any added sugar in Medjool dates. Dates are sweet by themselves and don’t need any extra sweeteners, I really don’t know why someone would choose those. So, be careful when buying dates; prefer organic or buy unpackaged and enjoy this natural sweetener with your children.
- Oat flakes. I always select whole-grain oat flakes.
- Sunflower seeds. You can replace them with other seeds, like pumpkin seeds.
- Shredded coconut. Can be found in most grocery stores.
- Walnuts. Walnuts have to be cut into pieces that little children can manage. You can skip them or replace them with other nuts.
- Tahini. I prefer whole grain here as well. It can be replaced by any nut butter.
Tips and Storage
- The base for these sweet date bars may be the dates, but you can improvise on the rest of the ingredients easily. You can, for example, try to add or replace the seeds. Or even better, allow your children to try to make the recipe and improvise.
- They’re the perfect snack for the school since it offers energy, but it’s also a great idea for a sweet, healthy, and nutritious treat.
- They can be eaten without needing to be baked. In that case, leave them in the fridge for 3–4 hours before cutting.
- They can be stored in the freezer as well.
- The dosages make 10–12 bars.
P.S.: The photo shoot was obviously affected by the school’s opening since I consider it the perfect snack for the school.

Nutritious and sweet snack full of energy.
Preheat the oven to 200°C, set to fan.
Pit the Medjool dates, weigh them, and process them in the food processor with the water into a puree.
Place the date paste into a large bowl, add the tahini, the crushed walnuts, the oat flakes, the coconut, and the sunflower seeds and mix well.
Line a square baking pan that’s 20 by 20 centimetres with parchment paper.
Spread the date mixture and press thoroughly.
Garnish with shredded coconut and bake for about 15 minutes.
Allow to cool and cut.
