They’re fluffy, playful, delicious, and nutritious! They contain spinach, which grants them iron and vitamins, while the bananas generously donate their sweetness. JUMP TO RECIPE

We love pancakes, and they can always be found in our weekend breakfasts. So, I never waste the opportunity to try to make them with any fruit or vegetable that can be found in abundance at that season in our house and our fridge. This time, though, a vegetable was combined with fruit, and they created this amazing combination of flavours, spinach banana pancakes.

And there’s the beautiful green colour, of course, which always gives me ideas about how to offer them to the little hands. With the spinach pancakes, I’ve made ninja turtles, frogs, trees, I’ve imagined regular turtles, dinosaurs… In general, I want to make them again and again and play with them—if I manage to do it in time because the little hands eat them two at a time.

Here, they found their way to our favourite eco-friendly bamboo plate, and we have a tree made from spinach pancakes, with a trunk of emmer bread with cocoa almond butter spread, apples made from cherry tomatoes, and broccoli as grass.

Spinach is rich in iron, vitamins, and trace minerals and aids our immune and nervous systems, while it’s necessary for children with iron deficiencies or anaemia. In this recipe, it’s used raw, so retains a large part of its nutritional value.

For this recipe, you’ll need oat flour, but if you don’t have any, you can use the same quantity of oat flakes, processed through a food processor and into a flour. I’ve made these with rice flour as well and they were equally delicious. But let’s not waste any more time, write down the ingredients so that your own little ones can enjoy these green pancakes!

 80 g spinach
 2 small bananas
 50 g almond milk (or any other milk)
 1 egg
 80 g oat flour
 ¼ tbsp cinnamon

Process the spinach in the food processor thoroughly.

Then add the rest of the ingredients and continue until you have a runny mixture.

Heat up a non-stick frying pan over medium to low heat, then spoon the mixture on it.

When little holes appear on the pancake, turn over and cook from the other side.

 80 g spinach
 2 small bananas
 50 g almond milk (or any other milk)
