We all love pancakes. You don’t need to be a kid to want to try them as soon as you see them, or mainly as soon as you smell them. JUMP TO RECIPE

And while we are used to eating them for breakfast, let me tell you that they can easily be eaten at any hour, for an evening snack, or for a snack during your stroll.

The little hands (and the larger ones, of course) love them, and they sometimes even eat them by themselves right out of the frying pan while Mum is still cooking!

In this recipe, their aroma, thanks to the orange, filled the whole house, and made the cooking time feel like an eternity!

Also, they have that characteristic sweetness thanks to the carob syrup, which makes them soar. If you don’t like it, though, you can easily replace it with honey or petimezi, or even skip it. Remember that we must always be flexible when cooking, that’s part of its magic!

As I noted above, they can be eaten by themselves, but for a complete serving suggestion, I’d suggest you accompany them with tahini, carob syrup, and orange slices. You can also serve them with carob syrup, shredded coconut, almond butter, and berries! The combinations and serving suggestions are truly infinite, and I won’t write anymore because now I’ve worked up an appetite!

Let me note that this recipe is suitable for children allergic to eggs or for babies not yet introduced to it, while it can be made completely vegan if you replace animal dairy with plant dairy!

A fundamental tip for perfect pancakes is being patient while frying, over low heat, with no oil as long as you’re using a non-stick frying pan.

Solid ingredients
 1 ¼ cups cups emmer flour (or all-purpose flour)
 ½ tbsp baking powder
 ½ tbsp Ceylon cinnamon
 ½ small unwaxed orange, the zest
Liquid ingredients
 1 cup milk
 2 tbsp yogurt
 1 tbsp carob syrup
 ½ tbsp olive oil

Mix the solid ingredients first in a bowl, then add the liquid ingredients. Mix thoroughly with a spoon and cook your pancakes on a non-stick frying pan, over medium to low heat. Turn over when little holes appear and cook on the other side for 1 more minute.
Serve with carob syrup, tahini, ground nuts, or fruit! You can eat them just as easily by themselves, too!
