These broccoli balls are something to be experienced! They’ll be gone before you get to say “broccoli,” because they don’t have broccoli’s intense smell. They even got the approval of the large hands, which are very demanding. And the little hands? While Mom made the table, they had eaten the first and continued by eating 4 more, dipping them in the yogurt dip, which is an amazing combination. Jump to recipe

Broccoli is a special vegetable, which you’ll either love or hate to even smell it. If you’re in the second category, I guarantee that this recipe is for you. Despite broccoli’s divisiveness, there’s something that no one can deny, the fact that it’s one of the world’s most nutritious vegetables, and in the planet’s top 20 best foods.

It’s rich in vitamin K, and the benefits broccoli has for our health are irrefutable. And since it’s almost indispensable in our diet, especially the diet of our kids, I’m sure you’re always looking for ways to integrate it. This is one of the reasons behind this recipe’s creation.

When the little hands started their trip towards solid foods, he loved broccoli. For a time, no matter what vegetables were in front of him, he would always choose the little green tree first. Months passed, broccoli wasn’t in season anymore as summer came, and for a while, broccoli didn’t appear on our plates. And the little hands forgot about it… When Grandpa’s garden gave the first broccoli of the year, I was anxious about how the little hands would react to it, and he tried it once more… but just stopped eating it afterward. So, I was looking for ways to get him to try it, and never stopped offering a little broccoli “tree” with everything he ate. This is the recipe that did it. And for the record, after quite some time, he ate broccoli normally again, so don’t give up hope.

To make this recipe, you’ll need:

  • Raw broccoli. 
  • Raw sweet potato. Choose any kind you like, I prefer the orange ones.
  • Oat flakes will be processed in the food processor. 
  • Polenta. It’s a kind of cornmeal. If you don’t have any, use some more oats. 
  • Grated cheese, I usually prefer some local graviera cheese. 
  • White onions.
  • Oregano.
  • Thyme.
  • Eggs, preferably from your hometown, or organic and free-range. 
  • Flaxseeds (optional).

How to serve them

With a refreshing dip. You’ll find my suggestion for a simple and easy yogurt dip below.

How to store them

You can store them in the fridge, in a glass or stainless-steel vessel, for up to 3 days, and in the freezer, in little food bags, for 2–3 months.

Ingredients for about 30 broccoli balls
 450 g broccoli
 1 medium sweet potato
 1 grated onion
 45 g grated cheese
 2 eggs
 1 tbsp flaxseeds
 ½ cup ground oats
 ½ cup polenta
 ½ tsp oregano
 ½ tsp thyme
 2 tbsp olive oil
 pepper
Yogurt dip ingredients
 ½ cup of yogurt
 ½ tbsp tsp. mint
 ½ juiced lemon

Boil the broccoli until barely soft or steam it.

Strain and process in a food processor until completely processed.

Process the sweet potato in the food processor or grate it.

Move the vegetables to a bowl and add the rest of the ingredients and mix well.

Form into balls. They might be moist, but don’t worry. If they’re too wet, add oats. Then, line a baking sheet with parchment paper and place them on it.

Bake in a preheated oven at 200°C, set to fan, for 15 minutes.

For the dip, just mix all the ingredients in a small bowl.

Serve the balls hot and enjoy responsibly!
