In short, everyone will love this recipe. Who doesn’t belong to at least one of the three categories I mentioned? If you’re wondering if it’s tasty, then the little hands would reply to you “yummy!” which means a lot, as they’re emptying their favourite bowl

I’ve been making this recipe for a while in some variations. If you want to try it, just save it, and go look for the ingredients you’ll need! 

This pesto was served with chickpea pasta, making the lunch more complete, as this kind of pasta is rich in protein, and an amazing way for kids who don’t like chickpeas to eat this nutritious legume. Additionally, they’re gluten-free, for people with intolerance or families that are avoiding it. Of course, this is just my suggestion and how the little hands ate this pesto, you can use any pasta you want!

If you like pesto but don’t have any beetroot, you can try zucchini pesto or avocado pesto, all 5-minute recipes. If you do have beetroot but you want to try other recipes with nature’s red gold, I suggest the beetroot pancakes that turn every day into a Sunday and the multigrain beetroot crackers that the little hands have loved.

Cook Time7 mins

 250 g chickpea pasta
 2 beetroots
 30 g olive oil
 15 g pine nuts
 25 g cashew nuts
 10 mint leaves
 ½ squeezed lemon
 1 clove of garlic (optional)
 salt (for children over the age of one)
 pepper
For serving (optional)
 grated feta cheese

In salted, boiling water, add your pasta and boil for 7 minutes or as long as the packaging directions suggest. For children under the age of one, don’t salt the water!

While the pasta’s boiling, process the beetroot in the food processor until they’re pureed.

Add the rest of the ingredients and mix well until homogenous.

Strain the pasta and serve with the pesto while they’re hot!
